This thai curry recipe is great for entertaining guests as it is so simple to make and difficult to get wrong. I usually experiment with ingredients and the recipe has evolved over time. 
This recipe will feed 4-6 people, I have an intense exercise regime so at meal times my portion sizes are quite big.
You will need:
1 tbsp olive oil
2 tsp green thai curry paste (shop brought curry paste is usually a bit naff so i add to it with kaffir lime zest and leaves, lemongrass and dried chilies)
2 tbsp dark soy sauce (not the sweet asian kind though)
1 tsp fish sauce
1-1 1/2 tins of coconut milk
8 kaffir lime leaves
3 stalks of lemon grass chopped into inch sections
The vegetables are up to you really but this is what I usually use.
2 medium leeks thinly sliced (you can use onions but i think the leeks add more flavour)
2 tomatoes chopped into eighths
1 butternut squash, skin chopped off and diced
1 tin or chickpeas, drained
1 head of brocoli
1 packet of uncooked king prawns
For the garnish i used greek yoghurt mixed with a little salt pepper and lemon juice and sprinkled fresh coriander on top.

In a wok heat up the oil and add the curry paste and lemon grass, stir them until smelling gorgeous, then add tomato, keep stirring until soft then you can add the leeks these will need about 5 mins to soften up.
Now add the soy sauce, fish sauce, coconut milk, lime leaves chick peas and squash, you may need to add a splash of water if it is too concentrated, bring this mixture to a simmer for about 6-7 minutes then add broccoli, this will need about 3-4 minutes to cook then you can add the prawns right at the end and just cook until pink.
